Finnebrogue supports career progression in principles of meat technology

Finnebrogue employees complete the Open College Network Northern Ireland) Level 3 Award in Principles of Meat Technology.

In the dynamic meat processing industry, continuous learning and upskilling are vital for staying ahead.

In recognising the need for specialised training, Finnebrogue encourages its employees to grow and develop in their roles. And this is the experience of David, Sarah, Brogan and Ashleigh who work in Finnebrogue’s NPD process and technical teams.

With the support of their line managers, they successfully completed the Open College Network Northern Ireland (OCN NI) Level 3 Award in the Principles of Meat Technology through the College of Agriculture, Food & Rural Enterprise (CAFRE).

This qualification equips modern food technologists with essential knowledge and skills, covering meat eating quality, legislation and labeling, meat microbiology and shelf life, as well as advanced techniques in meat curing, smoking, fermentation technology, and the manufacture of burgers and sausages.

The course provided an opportunity for David, Sarah, Brogan and Ashleigh to refresh previous learning and gain a deeper understanding of the technical demands of the meat industry, particularly in quality assurance and new product development. They now plan to use their newly acquired knowledge to improve product quality and foster innovation at Finnebrogue.

Sarah Hill, Assistant Technical Manager (pictured second from left) explains how she and her team have benefitted from this additional learning opportunity.

“I really enjoyed this course and gained invaluable insight into the science behind many of our production processes. This knowledge has enabled me to explain the rationale behind our processes to both my team and the operations team. They can now see why it is essential to maintain these practices and understand how even small factors, such as water temperature, can significantly impact our product quality.”
