BBQ Sausage Mince Tacos

Get creative with your Taco Tuesdays by swapping mince for a pack of our Naked pork sausages, chopped up and fried with spicy seasoning and onions.

Ingredients

  • Naked pork sausages, 1 pack
  • Olive oil
  • Sliced mixed peppers, frozen
  • 1 onion, sliced
  • Tacos/tortillas

 

SALSA

  • 4 tomatoes
  • Half a red onion, finelt chopped
  • 1 small clove of garlic, crushed
  • 1/2 lime, juice
  • White wine or red wine vinegar
  • Chopped coriander, handful

Method

Tacos are the perfect way to disguise vegetables for fussy little ones, and great for throwing in whatever’s left in the fridge!

  1. Slice the skin of each sausage and remove the meat. Discard the skins.
  2. Add the sausage meat to a cast iron pan or a bbq grill covered in foil. Alternatively, fry the sausage meat in a frying pan on a hob.
  3. Stir the meat until it breaks up into a mince and fully cooks.
  4. Add some veggies – sliced peppers and onions – into the pan for the last few minutes to give them a Smokey grilled flavour.
  5. Scoop some sausage meat into the tacos or tortillas.
  6. Add the veg and some salsa.

SALSA

  1. This tomato salsa is mild so it’s safe for the kids, but still packs a punch of flavour!
  2. Combine 4 finely chopped tomatoes with half a finely red onion, then add 1 crushed garlic clove to the mix.
  3. Stir in the juice of half a lime, a small splash of white wine or red wine vinegar & mix in some finely chopped coriander and a sprinkle of pepper.
  4. Mix the ingredients together & add a generous dollop into your sausage tacos!
